Tasting whisky The darker the colour of the whisky the older it is and has been aged for a longer time. Whisky gets its colour from ageing in charred white oak barrels. If a barrel is used several times then it will give less colouration than the one that is new. If the barrel has been previously used to age sherry or wine then it will lend some colouration too. For whisky use a tulip-shaped glass because its narrow shape at the top concentrates the aroma. You can use a snifter glass to taste the whisky. Whisky tastes different when served chilled therefore it should be served at room temperature. Pour a small amount of whisky into the glass and roll the glass into a circle. This will help to bring out the aromas that are at the bottom. Raise the glass to your nose and smell it. The aroma gives an indication of how the whisky will taste. You should smell the whisky before you sip it. Twirl the glass around and check how it moves down the sides of the glass. The streaks that it makes are called ‘Legs’. A whisky with thick legs gives a more pleasant feel to the mouth and has a smooth and creamy texture. Put your hand over the glass and agitate the whisky and let bubbles form. If it takes longer for the bubbles to disappear then the whisky has a higher alcohol by volume. Start by taking a small sip of whisky. Coat your entire tongue and let it linger on your palate for a little while. Depending on the type of whisky you may get a woody, spicy, caramel flavour. As you swallow the whisky you will get a burning feeling as it goes down. This is called the ‘Finish’. In a short finish, the flavour does not linger in your mouth. In a long finish, the flavour stays in your mouth after you have swallowed it. A mellow finish offers a smooth and pleasant flavour. An unpleasant finish, will have a bitter flavour and burn as it goes down.
